Figgy Pudding for some, Irish Cream Chocolate Mousse Cake for others. Like me. Mmmmmm. Layers of espresso sponge cake soaked with and Irish Whiskey syrup alternated with an Irish Cream chocolate mousse. I take it upon myself to make dessert every year for Christmas dinner and, as a chronic over-achiever, it has to be something spectacular and generally time-consuming. But delicious. And absolutely worth it.
Combine Irish and Whipping cream and whip to a frenzy.
Egg and sugar.
Curl an ounce of chocolate for garnish
(and end up looking like a small child
with chocolate all over hands and face!)
Combine and fold!
Saturate with Irish Whiskey.
Layer like a moon pie.
